The Deba Knife

The Deba Knife was one of the first high level Japanese blades made soon after the sword making industry moved to knife making (public holding of swords was banned so sword makers had to change what they did).

This blade is single beveled which takes some getting used to due to the concave nature of the internal blade.

This blade style and thick heavy spine will lead to downward cuts where the meat, fish or poultry being chopped almost has no contact with the blade.

This ensures a very clean cut and the result of this knife performance ensures it remains of of the most popular knives within Japan despite it's long history.
