The Gyuto Knife

The Gyuto Knife or "Cow Sword" is the most popular Japanese style knife in the world.

Popularity of the Gyuto knife may be largely due to the diversity of the blade's use - it is an "all purpose" knife much like a Western "chefs knife." 

When compared with a classic Western chefs knife the Gyuto knife is lighter in weight (largely due to the half tang handle), stronger (due to carbon imposed on the core) and sharper.

For those beginning a collection of Japanese designed knives (in this case the steel in Japanese however the handle is made from Australian wood) the Gyuto is the perfect place to start.
