The Petty knife is an all purpose blade just like the chefs knife.\u003c\/p\u003e\n\u003cp\u003eIf space in your kitchen is modest, if you have smaller hands holding the knife or if you are cutting smaller ingredients using intricate cuts on fruits and vegetables the Petty knives are often the preferred knife in the kitchen.\u003c\/p\u003e\n\u003cp\u003eIn preparing the Paring\/Utility we have chosen to use AUS10, a Japanese steel that has high carbon content which leads to a tough and hard edge. This leads to a blade that should stay sharper for longer when compared with European steel (more malleable).\u003c\/p\u003e\n\u003cp\u003eFor the handle of the petty knife we have sourced wood from Mclaren Vale, South Australia. Given we love to work with burl (the bottom part of the tree which has unique curvature) we are often needed to use resin to fill the gaps. We tend to use red to complete shiraz burl handles, green for Almond trees, etc .... for the petty knife we look to match the colour of the handle with it's origin.\u003c\/p\u003e\n\u003cp\u003eBelow we have the collection of the petty knives we currently have in the shed.
