The Shiraz Burl, coated in a deep red to denote its origin and the wood within, is where Koi Knife handles begun. At just over 100 years shiraz grapes slow down yield of grapes and juice and eventually begin to die. This is where we bull the vines out and remove the burl (roots and just above) to begin their reincarnation - they end their life as a vineyard.
