The Kiritsuke Knife
The Kiritsuke is the ultimate "K-Tip" all purpose blade.
When considering the utility of this knife it is somewhat like an elongated Bunka knife. The blade has a thick spine as the blade approaches the heel (which makes it easy to come down on pumpkin or watermelon) yet as you approach the tip it is thinner allowing for intricate cutting on fruits, onions etc. The blade length means you can even use it as a stand in bread knife.
