Apples can vary with either sweet or tart flavors and depending on the variety they can have a little bit of both. Something like a royal Gala or Jazz Apple like this one here is perfect to be eaten fresh, use it in salads fruit salads or just eat it as it is. Granny Smiths has that tart flavor so I do recommend adding a little bit of sugar
to balance that out. It's perfect in apple pies, crumbles, purees, sauces, things
like that.
I'm going to show you a few different ways to chop these up.

Now there's a couple of ways that we can cut the apples - we can slice them  directly through the core and then into quarters. Doing it this way we will need to
remove the core and any seeds as you can. To do this we want to grip this firmly in our hand and then use a paring knife to slice out that core and seeds obviously this is an extra step but it is really simple to do. This method also minimizes waste.
Once they're nice and cleaned up we can slice them into eights so just slice them in half and what we're going to achieve by doing this is getting those nice wedges
it's perfect for salads have it as a snack or you can even just use it in a
dessert and this is probably one of my favorite ways to prepare apples. 
Now the other method is to slice around the core but this time we're going to do it slightly off center. That way the core and the seeds will all stay in one piece and the apples will already be in wedges. If you wish to dice the Apple, all we need to do is cut this into even sized slices rotate at 90° and slice into nice large sized pieces. This method is perfect for sauces as well as desserts. 
Now depending on what you're using the apples for you may need to peel them. An easy way to do so is use a vegetable peeler or even a knife but a vegetable peeler is going to reduce as much waste as possible. Peel around the top and the bottom, creating a circle and then go through on the sides and create even strokes.
To remove that skin you may need to touch it up just finish off any little pieces that may be still on there.
Don't throw away the apple peel! You can use it you can dehydrate it, use it in drinks, slice it up and use it as a garnish, or just eat it if you prefer.
Also peeling an apple is for most cases when you need to make a puree or a  sauce, and some desserts require peeled apples.
Chop up the Apple either slicing it directly in half or creating those wedges around the core and this method is to slice them into thin even strips. This is perfect for fruit salads or even a dessert like a tart. 
Another method is to slice them the exact same way but this time slice them a little bit thinner. Stack those strips up on top of one another, probably about two to three layers at a time and then go through and julien them this is also known as the matchstick cut and this is perfect for salad or even coleslaw. 
We then have our diced apples, perfect for dessert sauces and purees, wedges for a snack or salad, Julien or matchstick cup for a salad or coleslaw and thinly sliced for desserts salad or a snack.
And that right there is my method to cutting apples
