Our latest additions have been created for heavy use in and out of professional kitchens. The idea came about from chef's asking us to make something that would be able to withstand the tough environment of kitchens and could be HACCP approved. For a lot of hotels and large scale commercial kitchens, wood handles are not allowed, so they must use either G10 or Micarta in their handles. The upshot to this is that both materials are dishwasher safe.
We have selected hardwearing VG10 steel for the cutting edge with an acid wash finish which protects the blade from further corrosion and happens to look totally badass.
