Sharpening your own knives at home can be both daunting and extremely rewarding. Knowing how to care for your knife will extend its life indefinitely, and will also put you in the drivers seat for controlling the quality of your cutting edge. A skill that takes a few times to learn, and a lifetime to master, like all great things.
Every few years, we also suggest a professional tune-up for each of your knives. To correct the bevel, control the cutting edge geometry, and to oil and polish the entire knife. Here is Joao once more, to show you how we sharpen/shape/polish your knives when you bring them in to us.
