We've been playing with the Honesuki (boning knife) for nearly 4 years and we're still not happy.
Shannon decided to trial a smaller version as a test knife. I'm looking forward to filleting some chicken and take the sinew from meat I'm about to roast to take this mini honesuki for a test drive.
