A pocket knife is the one tool you actually carry every day — so the question isn't really "which knife is sharpest." It's which one you'll reach for in ten years and still trust. Here's how to choose an Australian-made pocket knife that earns that place, and why the steel and the timber matter more than the marketing.
What "Australian-made" actually means in pocket knives
It's a phrase that gets stretched. Plenty of knives sold as "Australian" are designed here and built somewhere else, or assembled here from imported everything. There's nothing wrong with a good import — but if you want a knife with a genuine Australian story, it's worth knowing what you're paying for.
At Koi, "Australian" means the design, the naming, the timber selection and the finishing decisions are ours, made by people who carry these knives in the same conditions you do. Our pocket knives are built around two ideas we keep coming back to: engineering and art. The engineering is the lock, the pivot, the steel and the grind — the part that has to work every single time. The art is the timber, the lines, the bird it's named for. A good pocket knife needs both, and most cheap ones quietly drop the first.
The steel: why MagnaCut and Sandvik, not "Japanese steel"
This is where most buying guides hand-wave, so we'll be straight with you. For a pocket knife that lives in your pocket, gets dropped, pried, and occasionally abused, the property that matters most isn't raw hardness — it's toughness and chip resistance. A super-hard kitchen steel that takes a screaming edge will also chip the first time you twist it in a zip-tie or a stubborn box. That's the wrong trade-off for everyday carry.
So across the Aviary we use two steels chosen specifically for EDC:
- CPM MagnaCut — a modern American powder steel that's become the benchmark for folders. It holds an edge for a long time and resists chipping and corrosion, which is the combination pocket knives have always struggled to get in one alloy.
- Sandvik 14C28N — a Swedish stainless that sharpens beautifully, takes a fine edge, and shrugs off rust. It's a brilliant steel for a knife you'll actually use and maintain rather than display.
You'll notice we don't call these "Japanese steel." Our kitchen knives draw on Japanese craft and tradition, and we're proud of that lineage — but a pocket knife asks different things of a blade than a chef's knife does, and we pick the steel for the job rather than the story. The handle: native hardwoods that earn their keep
A handle has to do two unglamorous things — fill your hand securely and survive years of pocket lint, sweat and sunlight — before it's allowed to look good. We build with stabilised native hardwoods because they're dense, they age well, and no two pieces are the same. The grain you get is the grain that tree grew. It's the part of the knife that becomes unmistakably yours.
If you're choosing between handle materials elsewhere, the short version: natural timber for character and feel; G10 or micarta if you want a near-indestructible working handle that won't notice the weather. We make both — some birds come in a hardwood and a G10 version for exactly this reason.
Blade shape and what to look for in an everyday carry
Most people overthink blade shape. For genuine everyday carry, a versatile drop point or gentle clip handles 95% of what you'll ask of it — opening parcels, cutting cord, food on a hike, a hundred small jobs a week. A few things genuinely worth checking before you buy:
- The lock. It should engage with confidence and release without a fight. A wobbly or vague lock is the one fault you can't fix later.
- The deployment. Whether it's a thumb stud, flipper or nail nick, you should be able to open it smoothly with one hand and a bit of practice.
- The weight and footprint. The best pocket knife is the one you'll actually carry. A knife that's too big or too heavy stays in a drawer, and a drawer knife is no knife at all.
- Serviceability. Can it be cleaned, oiled and re-sharpened by you, at home, for the rest of its life? It should be.
Is it legal to carry?
Carry laws differ from state to state in Australia, and "I have a good reason" carries real weight — a folding pocket knife used as a tool is treated very differently to a knife carried without lawful purpose.
