The Gyuto is an absolute favourite for us. 210mm cutting length, light-weight VG10 Damascus steel, and now with western-style handle.
Although we are fanatics about local hard woods, we opted for a new ergonomic grip with G10 scales, comfortable and practically indestructible. Ready to thrive in professional kitchens or at home.

High carbon VG10 67 layer Damascus Japanese steel.
The Gyuto is the all-purpose knife - the Japanese equivalent of a chefs knife. The 210mm blade makes it the ideal allrounder for everything.
VG10 is renowned for its incredible edge retention, able to hold a razor sharp edge for much longer than western steels. Unlike higher carbon powder steels, VG10 has a higher amount of chromium, making it stainless.
G10 is a resin and fibreglass composite used for circuit boards and tactical gear, where it is able to withstand extreme temperatures while remaining hard-wearing.
For some people they prefer knives that look sleek but less obtrusive than many of our bright and colourful blades - everyone's kitchen is different.
For those after this look and feel we made the Ninja collection. Subtle red and white spacers sitting between the blade and the black handle bring the Japanese origin to the table whilst still not going over the top with colour.

All Koi Knives products are warranted to be free from defects in materials and workmanship during the period of one year from the original date of purchase by the end user.
Should a manufacturing defect arise within the warranty period, We will repair
or replace the knife at our discretion without charge.
Please note: This warranty does not cover damage resulting from improper use or care, accidents, modification, commercial use, neglect, or regular wear and tear over time. We are not responsible for knives that have been damaged from misuse such as dropping, improper cleaning methods (like putting the knife through a dishwasher), or excessive force.

Please note: We recommend washing blades by hand using warm soapy water and drying them straight away or in any way that does not have water pooling on the blade.
Handles can be oiled using a natural oil such as a Camellia oil.

Orders within Australia should arrive within a week.
International orders can take between 1-4 weeks to arrive.
